Boozy Chicken is the best!!

So, that was my challenge last week — to make falafel and an array of salads to please our palates. I certainly didn’t create 23 different salads, but I did manage to turn out 5 salads plus a tahini sauce, not to mention softly-boiled eggs and freshly fried falafel.

Vietnamese-style noodle bowls: sliced flank steak, pickled carrots, pickled eggs, steamed broccoli, roasted sweet potatoes, peanuts and a shower of fresh herbs — YUM! And fun to eat to boot.

This is, hands-down, the best roast chicken I have ever pulled out of my oven. I have tried so many different recipes and tricks and flips and rubs and butter bastes, etc., but this wins every category — taste, moist meat, crispy skin and EASE! Go get yourself a birdie and get brining.
